So after
Hubby got a $150.00 speeding ticket after trying to get fingerprints done, but didn’t), K and I decided to cheer him up.
We surprised him at work for spontaneous lunch out and ice cream.
I only mention this because it’s the first ice cream I’ve eaten in a very long time.
At least three weeks or more.
No, I didn’t order chocolate, although I was very tempted. I got peppermint ice cream with marshmallows.
K, after pleading with me for days for ice cream, was very happy with her strawberry with sprinkles on top in an large ice cream cone.
Yummy.
Her short curly hair was in pigtails and her ice cream was all over her face and she had the biggest smile you’ve ever seen.
She was enjoying every morsel. And so was I.
Then I hear hubby.
No NONONONONO, oops.
K took her brand new huge delicious ice cream cone and dumped the whole thing in the trashcan behind her when my nose was in my spoon.
Neither of us, the parents that is, saw it coming.
I said,
Honey, your ice cream is all gone.
Yep.
Daddy said.
Why did you throw away your ice cream?
I was finished.
Now I want yours mommy.
Ok. Fine.
At least I didn’t eat much of it myself.
Tomorrow I was asked to bring chocolate for dessert over to our friends for Thanksgiving.
(my diet is doing good otherwise. Next week I hope to post of photo of my in the
cool dress I want to wear. Stay tuned!)
Here is my favorite
Rachael Ray quick chocolate recipe.
It is a wonderful fudge that even I can't eat a lot of. I'm taking it to Thanksgiving with nuts instead of Christmas cherries as decorations.
1 (12-ounce) bag semisweet chocolate morsels
9 ounces (3/4 of a 12-ounce bag) butterscotch morsels
1 (14-ounce) can sweetened condensed milk
1 teaspoon vanilla extract
1 (8-ounce) can walnut halves
1/2 cup (a couple of handfuls) currants
8-inch cake pan, lightly greased with softened butter
Candied cherries, red and green, for garnish, optional
Place a heavy pot on the stove and preheat it over low heat. Add chips and milk and stir until chips are melted and milk combined. Save the empty condensed milk can. Stir in vanilla and remove fudge from heat. Add nuts and currants and stir in immediately.
Cover empty condensed milk can with plastic food wrap and center it in the greased cake pan. Spoon fudge into pan around can, making sure to recenter can if it drifts.
The fudge will set up almost immediately. Garnish can only be added in the first minute or 2 the fudge is in the pan, so work quickly. Decorate your wreath with "holly" made from cut candied red and green cherries. A wreath left plain can be garnished with a pretty fabric bow when serving. Chill covered in the refrigerator and slice fudge very thin when ready to serve, a little goes a long way.
Happy Thanksgiving everyone.
